Tandoori Prawns & Two Sprouts

This was a really easy one pan meal to make. I know there are many who don’t like sprouts but the trick is to pack as much flavour into them and always a little buutttttahhhhh 🧈!
Serves 1
Ingredients
165g M&S raw king prawns
2 tsp tandoori powder
20g red onion, diced
120g brussel sprouts, trimmed & halved
60g sprouted moth beans
8g fresh coriander, finely chopped
1 Taj frozen crushed garlic ginger cube
2 tbs rapeseed oil
10g butter
Salt & pepper to taste
Wedge of lime, to serve

Method
Put the prawns in a bowl and sprinkle over the tandoori powder and a tbs of oil. Mix it all so the prawns are coated well. Cover and leave in the fridge to marinate for about 20-30 mins.
Heat a tbs of oil in a frying pan over a low-medium heat. Add the garlic ginger cube and let it soften , this should take 2-3 mins. Add the onion and fry till it has softened.
Add the brussel sprouts and sauté over a medium heat for 4-5 mins before adding the sprouted moth beans. Stir and cook for about a minute before adding the prawns and half the chopped coriander. Season and cook for another 3-5 mins, adding the butter half way through until the prawns have cooked through. Give everything a a good toss together.
Sprinkle over the remaining fresh coriander and serve with a wedge of lime. Add some freshly chopped red chilli if you want it spicier. There you have it - one really easy and nutritious meal.
