Orange & Saffron Posset

Serves 4-6
Ingredients
600ml double cream
120g caster sugar
Zest & juice of 2-3 oranges
Pinch saffron strands
Toppings
Pistachio nuts, chopped
Fresh orange chunks
Per Portion: approx. 534 kcal, 3g protein, 43g fat, 32g carbohydrate

Method
Bring the cream and sugar to boil over a medium heat and simmer for 3-5 mins then remove from heat, adding a few strands of saffron mid way through.
Mix in the zest and whisk in juice until combined. Leave to cool and infuse for apx 20-30 mins.
Divide between glasses, cover with cling film, refrigerate until set (preferably overnight).
Top with some chopped pistachios and fresh orange chunks for extra freshness.
Psst...don’t panic if it doesn’t set. Serve it up as a flavoured cream over some freshly cut fruit, no one needs to know 🤐🤫
